Sweet and Sour Meatballs
Ingredients
Meatballs:
1 lb (450g) ground beef or turkey
1/3 cup breadcrumbs or matzah meal
1 egg
1 Squirt ketchup
1 small onion, grated or very finely chopped
1 teaspoon oregano
Salt and pepper to taste
Optional: 1–2 tablespoons seltzer (helps make them fluffier)
For the Sauce:
1 cup ketchup
1 cup water
3/4 cup brown sugar (adjust to taste—less for tangier, more for sweeter)
2 tbsp lemon juice or white vinegar
1 tsp onion powder or 1 clove garlic, minced
Instructions
Make the Meatballs:
Mix all meatball ingredients until just combined.
Roll into small balls, about 1 inch in diameter.
Make the Sauce:
In a large pot, whisk together ketchup, water, brown sugar, vinegar/lemon juice, and seasonings.
Bring to a simmer over medium heat.
Add Meatballs:
Gently drop the meatballs into the simmering sauce.
Cover and cook on low heat for 35–45 minutes, stirring occasionally to make sure they don’t stick.
Serving Ideas:
Serve over white rice or noodles.
Great as a Shabbat appetizer or even over mashed potatoes.
