Sweet and Sour Meatballs

Ingredients

Meatballs:

  • 1 lb (450g) ground beef or turkey

  • 1/3 cup breadcrumbs or matzah meal

  • 1 egg

  • 1 Squirt ketchup

  • 1 small onion, grated or very finely chopped

  • 1 teaspoon oregano

  • Salt and pepper to taste

  • Optional: 1–2 tablespoons seltzer (helps make them fluffier)

For the Sauce:

  • 1 cup ketchup

  • 1 cup water

  • 3/4 cup brown sugar (adjust to taste—less for tangier, more for sweeter)

  • 2 tbsp lemon juice or white vinegar

  • 1 tsp onion powder or 1 clove garlic, minced

Instructions

  1. Make the Meatballs:

    • Mix all meatball ingredients until just combined.

    • Roll into small balls, about 1 inch in diameter.

  2. Make the Sauce:

    • In a large pot, whisk together ketchup, water, brown sugar, vinegar/lemon juice, and seasonings.

    • Bring to a simmer over medium heat.

  3. Add Meatballs:

    • Gently drop the meatballs into the simmering sauce.

    • Cover and cook on low heat for 35–45 minutes, stirring occasionally to make sure they don’t stick.

Serving Ideas:

  • Serve over white rice or noodles.

  • Great as a Shabbat appetizer or even over mashed potatoes.

  • Doubles and freezes beautifully!
